Spanish Desserts

We decided to expand our collection of desserts recently and started looking around for new and novel ideas to use for our ‘signature’ desserts. We looked in all the supermarkets and bakeries, but found nothing that really exited us by way of desserts.

What we did find however, was an abundance of fresh fruit. Locally produced fruit is scarce in the Valencia region at the moment because of the devastating frosts that killed off all of the fruit flowers in February. But what would have been local produce, has bee replaced with fresh fruit from Southern Spain, Egypt, Morocco, Italy and Israel. Being on the Med, all of these countries are just a couple of hours away by plane, so fruit picked yesterday, can be on the shelves or market stalls here in Valencia the very next day. Equal or sometimes better than home produced fruit.

So, What can we do that is different? Desserts are always a delight on the eye as well as the plate. We have an excellent guide that we obtained from Philadelphia themselves all about the versatility of their cream cheese. So that started us thinking. Can we make some interesting desserts using fresh fruit and cream cheese?

Of course we can – and here’s how we did it.

Select a variety of fresh fruits. We used kiwi fruit, apricots, giant strawberries, plums and figs. Slice off the top of the fruit and hollow out the flesh. You now have a choice. You can use the flesh of the fruit to mix with the cream cheese and flavour the individual fruits. Or, as we originally suggested, you can finish the desserts by simply mixing an orange marmalade into the cheese to fill the fruits.

We have tried both variations of the desserts and we liked them both. I think the ‘same’ fruit flavoured version had a slight edge over the marmalade version.

Because of the savoury side of the cream cheese, we can use these not only for desserts, but for starters as well or even with a nice slab of blue cheese or aged cheddar on the cheeseboard.
