Grilled Onion Pizza
I will never lose my love for pizza, and I’ve got to believe I’m not alone!
Grill it or bake it—company will come! I try to serve it as an appetizer or main course as often as possible since it is such a popular and versatile food.
In fact, you’ll notice just how versatile when you try my onion pizza—something I created because I decided not to include the traditional tomato sauce and cheese.
Have you realized that the older we become, the earlier we want to entertain? No more late dinner parties for this gal.
The last time I got together with some good friends, we started the party at two in the afternoon. We agreed to get together for a late lunch/early dinner, something I hadn’t really done before. My husband dropped me off for an appointment which happened to be in my good friend Maria’s neighborhood.
She was expecting us for that “late lunch” and was just starting to prepare pizza using her new pizza stone as we arrived. Well, we all got to talking in the kitchen and started helping Maria and her husband Joe toss the pies together. We were laughing and having a grand time cooking together and arguing about how to prepare these luscious pies. It was the best time in the kitchen I ever had with another couple.
Better yet, the pizzas turned out great, and we relaxed and enjoyed eating and having fun until the clock struck 7 p.m. and we started winding down. An hour later, we were home and nodding out on the couch!
As life changes, so should you. It doesn’t matter when you get together with friends or family; it is the fact that you do get together and enjoy each other’s company!
Grilled Onion Pizza
- 2 cups flour
- 1/2 teaspoon salt
- 2/3 cup lukewarm water
- 1 tablespoon olive oil
- 1 teaspoon dry yeast
- 1 to 2 onions, sliced
- Olive oil
- Kosher salt
- Fresh rosemary
- In a bowl, place flour, then salt. Mix with your hands. In a cup, dissolve the yeast in the warm water. Let it sit for a minute. Add the olive oil. Make a well with the flour mixture then pour in the water mixture. Mix together to form a dough. Knead until dough becomes shiny and smooth. (If you are using a bread machine, follow the manufacturer’s instructions for adding the ingredients and make sure you use only the dough setting.)
- In a clean bowl, rub a little olive oil to cover the inside of the bowl. Place the dough in and let it rise at least for 1 hour. Take the dough out, punch it down, and let it rise again for another hour. The longer it rises the better the dough.
- Clean your grill and remove any old food particles first. Steam the sliced onion covered in the microwave for about 2 minutes to make them tender.
- When you are ready to cook your pizza, preheat your grill to 425 degrees for 10 minutes. Rub a little oil on your hand before working with your dough, so your pizza will not stick to the grill. Stretch your dough to the size pizza you desire and place it on the cleaned grill.
- Cook a few minutes and then with a spatula, check the dough for doneness. When cooked on one side, flip over and continue cooking. Immediately upon flipping the pizza, spread the onion slices. Sprinkle the onions with kosher salt and rosemary. Drizzle a little olive oil over everything for a final touch and cook for a few more minutes. Serve immediately. It’s a great summer appetizer!
