Baby Yorkshire Puddings with creamy smoked trout horseradish pâté and shrimp mayo dill sauce
You’ll find British Yorkshire Puddings on the menu beside roast beef. But these Baby Puddings go great as a starter. Just mix a couple pâtés to stuff them with. We pre-stuff them for large events to make them easier to pass out. But at home, just place the pâtés in a bowl beside the Baby Puddings and let everyone help themselves. (The Puddings go equally well with ice cream, fruits, and sauces as dessert)
Shrimp Mayo Ingredients:
2 1/2 tsp. kosher salt
½ lemon
2 tsp. lemon juice
1 ¼ lbs. small shrimp
2 tbsp. mayo
½ tsp. Dijon mustard
¼ tsp. freshly ground black pepper
2 tsp. dill
1 chopped celery
Steps:
Bring 1 quart of water, 1 1/2 tsp salt, and lemon wedge to a boil in large saucepan.
Add shrimp and reduce heat to medium.
Cook uncovered for only 3 minutes or until the shrimp are barely cooked through.
Let cool; then peel and devein.
Course chop.
In a separate bowl, whisk together the mayo, mustard, lemon juice, ½ tsp salt, pepper, and dill. Stir in shrimp and chopped celery.
Cover and refrigerate.
Creamy Smoked Fish Ingredients:
4-5 ounces of cream cheese
2-3 heaped tsp. prepared horseradish
1 lemon
Small bunch of fresh chives, freshly chopped
Sea salt and ground pepper
4-5 ounces hot-smoked trout, skin removed
Steps:
Mix cream cheese, horseradish, zest of 1 lemon, and juice from half lemon.
Add chives, salt, and pepper to taste.
Flake in trout and fold in so you have small bits and chunks.
Yorkshire puddings Ingredients:
4 eggs
1 1/4 cup Flour
1 ½ cups milk
1 tsp salt
Vegetable oil
Steps:
Beat milk, eggs, flour, and salt together until smooth.
Set aside for 30 minutes.
Yorkshires rise better when the batter has a chance to sit a spell.
Preheat oven to 450 degrees.
Put about a tsp. of vegetable oil into each compartment of a mini muffin pan.
Put the muffin tin into the oven for 10 to 15 minutes, so the oil gets hot enough to smoke.
Remove pan from oven and pour batter into hot pan so it nearly fills each compartment.
Batter for the puddings should sizzle as it’s poured on hot oil. Return pan to oven and bake for 10-12 minutes, or until puffed up and golden.

Classifying Shamrock Rose and Thistle is a challenge. We’re a cross between a British Pub, a Southern Family Restaurant, and an English Tea Room. We call ourselves a gastro pub, in that we cheerfully serve whatever we desire–British, French, Italian, Thai, Indian, and of course Southern American cuisine–in a welcoming atmosphere. The gastro pub movement started in the early 90’s in London, England. The idea of taking an existing pub, injecting a young gourmet chef, and elevating the experience for its patrons crossed the pond and has been permeating this country for a few years now.
Rhonda and Bill didn’t start off to create Mobile’s first gastro pub when they opened Shamrock Rose Thistle. They were looking for an older building with character and space for outside dining. Bill wanted to create the same feel as the village pub in Stanton, England, where he was raised, but with a much better menu. Rhonda wanted to recreate the English Tea Rooms they visited around Suffolk. They compromised and did both.
Shamrock Rose and Thistle is a place to celebrate family events or catch up on local news; share a pint with friends or relax over afternoon tea. You can pop in for a drink, run in for a quick bite, or linger over an exceptional meal and a fine wine. Focusing on a simple menu, fresh ingredients, well prepared, at a reasonable price; we prepare traditional dishes with a gentle gourmet twist.
