Spicy Sweet Potato Ravioli with Cranberry Brown Butter Sauce
It all began with …a challenge!
I have a challenge from the North Carolina Sweet Potato Commission’s No More ‘Mallows! Blogger Recipe Contest. Basically food bloggers were issued a challenge to create wonderfully diverse recipes without a marshmallow in sight.
This of course referred to the classic Thanksgiving Day Sweet potato casserole topped with marshmallow that children of all ages love!
SO it starts with the potato…

which I baked at 400 degrees in my oven for 1 hour.It came out looking like this and I wish you could have smelled my kitchen! So sweet and homey.

I then assembled my ingredients to make a simple savory side for my store bought roasted chicken ! I wanted to try my hand at making raviolis from won ton wrappers! I knew the dough would be more delicate than regular pasta raviolis and felt it would be perfect for my idea!
Since my husband would be having this for dinner and he’s a meat and potatoes kind of guy with a space on his plate for each I considered flavors that naturally went with roasted chicken. Out of the box but not a real stretch if you know what I mean!
I had found some cranberry jam which I like very much and had most of the jar left. I also had found a small package of glazed cranberries and walnuts in the salad aisle as a garnish for salads which would make a nice crunchy garnish for the top. I worked up a basic idea of my recipe and got to work.
First I peeled and placed my sweet potato in a small food processor to make a nice puree. The large sweet potato gave me 1 cup which was what I had figured. Okay I was good to go!
Here is my recipe and the step -by-step procedure!
Spicy Sweet Potato Ravioli with Cranberry Brown Butter Sauce
2 tbsp butter
1 small onion, diced fine
3 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon freshly grated black pepper
2 tablespoons cranberry jam or conserve
1 cup sweet potato puree
1 ½ teaspoons pumpkin pie spice
1 packet wonton wrappers
1. Heat butter in a medium size sauté pan over medium heat.
2 .Saute onion and garlic in butter until onions are soft.

3. Add salt, pepper,and cranberry jam . Reduce heat and cook for 1 minute.
4. Add sweet potatoes, and pumpkin pie spice. Stir and simmer for 3 minutes.
5. Remove from heat , and cool.
6. Place wonton wrappers onto a wax or parchment papered board. . Place 1 tsp of filling in the center of each square. I used a small scoop and then flattened it. Dampen edges and fold into a triangle. Pinch edges to secure.

7. Cook in boiling, salted water for 4-5 minutes, until they float.
8. Remove and plate on small tapas plates or side plates.
Cranberry Brown Butter Sauce with Glazed Cranberries and Walnuts
6 tablespoons butter
1 /3 cup cranberry jam or conserve
½ teaspoon salt
1 cup glazed cranberries and walnuts
1. Melt butter in small non-stick pan. Add cranberry jam and salt.

2. Cook until butter turns light brown. Remove from heat.
3. Ladle small amount over pasta and garnish with glazed cranberries and walnuts
Makes 36 ravioli
This recipe makes enough to serve as a side for 4 -6 or as tapas plates for 8-10. They were wonderful. Very light and tasty.

Finally my review. We loved it. I am so happy I got to stretch and try new things. We actually love sweet potatoes but often stay limited to fries and stuffed with brown sugar . This side will be made often . I sent some home to daughter and husband to try. I’m sure they’ll love it too!

CSPI ranked the sweet potato number one in nutrition of all vegetables. With a score of 184, the sweet potato outscored the next highest vegetable by more than 100 points. Points were given for content of dietary fiber, naturally occurring sugars and complex carbohydrates, protein, vitamins A and C, iron and calcium. Points were deducted for fat content (especially saturated fat), sodium, cholesterol, added refined sugars and caffeine. The higher the score, the more nutritious the food.
