Valastro says the key is “patience. And practice. Allow your imagination to guide you.”

What with his successful TV show, speaking engagements, an incredibly busy and expanding company and a big, Italian family — how does Valastro manage to juggle it all?

“I just take everything in stride — and focus on what it taking place. I take things piece by piece — once the book promotion is finished I’m on the bus back home to my family.”

I ask Buddy about one of the recent episodes on his show — the one featuring the vampires who wanted a specific cake made in the shape of a body in a coffin. “Yeah, that was a wild episode,” said Valastro. “How these requests get into the show is this — we take the cake orders, and then we look through them with the producers. We pick the best three cakes of the week — the most elaborate, or weirdest, and we feature them.

“The vampire cake was really weird — but we just laughed! We’re from Jersey, nothing scares us!” said Valastro with a laugh.

What’s new with the bakery? “We’re going to be offering baking and cooking classes right in the new bakery,” said Valastro, happily. “It’s for kids and adults.”

Open to Canadians? “To everyone.”
