Humber Seafood Institute trains Tesco fish staff
Ten Tesco employees recently attended a three-day residential course at the Humber Seafood Institute (HSI) where the Seafood unit of the Grimsby Institute is based.
The pilot, which is part of a national qualifications programme in fish and shellfish, saw Mark Green, Tesco’s Fresh Food Operations Manager take part in the course.
He said: “We are working with the Grimsby Institute on developing a partnership to train our fishmongers and give them greater fish knowledge in order to provide a better service for our customers.”
The residential course included practical training from Tesco Fish Specialist, Gary Hooper who said:”The idea is to give our fishmongers an overview of the entire process from the fish being caught to it being displayed and sold in our stores.
“We want to get members of the public to see Tesco as a fishmonger rather than just a supermarket selling fish. It is hoped the partnership will lead to a more permanent association.”
During the course the fishmongers used the state-of-the art facilities at HSI and received real practical training which was supported by Paul Barnett, who is the Institute Fish Specialist and has many years’ experience in the Seafood Sector.
Also included in the training was a presentation from Steve Norton, chief executive of the Grimsby Fish Merchants Association, who gave an overview of Grimsby, highlighting how it is still a major area for Seafood with 70 per cent of all seafood processing in the UK carried out within the region and the importance of Grimsby being the centre for seafood training.
Mike Hambling, Head Chef at the Captains Table Seafood Restaurant in Cleethorpes, also donated his time to do a cookery demonstration with the candidates, who then had to prepare recipes using the same fish themselves.
Along with a factory tour at Seachill and a visit to the Fishing Heritage Museum the Tesco employees really enjoyed the course and their first visit to Grimsby.
