Get Fit: Healthy Recipes with Common Ingredients

(WZZM) – For many of us with the new year comes the desire to get healthy.

It is, after all, one of the most common resolutions, but it doesn’t need to only be for you.

It can also include your entire family.

Lisa Van Dyke, a registered dietitian with Spectrum Health has some advice and a recipe that includes ingredients most people already have at home.

Five Tasty Meals from a Can of Tomatoes

Start With:
1 large can regular or stewed, diced tomatoes
1 pound ground beef or turkey
1 medium onion, chopped
2 stalks celery, chopped

Brown meat with onions and celery. Season with a little salt and drain grease.

Meal One: Southwestern Chili

Put starter ingredients in a large pot. Add 2 cans kidney, pinto, black, red or navy beans liquid included (15 0z cans), 1 Tbsp. Chili powder, 1 Tbsp. sugar, 1 tsp. salt. Simmer for 2-3 hours and serve with crackers or corn bread and a salad. Enjoy!

Meal Two: Hamburger Vegetable Soup

Put starter ingredients in a large pot. Add 3-4 diced carrots, 2 diced potatoes, 1-2 cups water, salt and pepper to taste. Simmer for 1-2 hours. Serve with crackers or rolls, and a garden salad. (Any other vegetables, canned or frozen could be used) Comforting!

Meal Three: Grandma’s Goulash

Add 1 chopped green pepper to meat when browning along with the celery and onion. Put in large pot along with tomatoes, and 1 can whole kernel corn, drained. In a separate pan boil 2-3 cups noodles according to package directions. Add to previous ingredients. Serve or put in covered casserole dish and keep warm in 325 degree oven until ready to eat. Satisfying!

Meal Four: Beans and Rice

Omit meat. Simmer celery and onion in a little water or sauté in a little oil until tender. Add to tomatoes along with 2 cans beans with liquid (kidney, pinto, black, red or navy), 1 cup rice, 1cup water and 3 chicken bouillon cubes. Cook over medium heat until rice is tender and has absorbed all the liquid. Serve with grated cheese if desired. Tasty!

Meal Five: Spaghetti Sauce

Can use ground Italian sausage in place of ground beef or turkey. Put starter ingredients in a large pot and add 1 12 oz can tomato paste, 1c. water, ½ tsp oregano, ½ tsp basil, ½ tsp. garlic powder, and 1 Tbsp. sugar. Simmer for1-2 hours, adding water as needed. Serve over spaghetti noodles and with garlic bread. Yum!
