Beer and Pizza at Sublime Ale House

Just in time for San Diego Beer Week, we welcome the city’s newest craft brew and dining destination: Sublime Ale House. Located along California Restaurant Row in San Marcos in a central spot referred to as the North County Beer Triangle, Sublime is poised to become a new hot spot in the local craft beer-loving social circle.

Owner James Limjoco envisioned Sublime to be a gathering spot for advanced beer connoisseurs and novices alike, and brought the idea to life with an urban-rustic interior design, 48 taps of local and global brews, and a menu of comfort food, including 20 pizzas, 15 mac ‘n’ cheeses and grilled cheese done 10 ways. Oh, and if you can’t make up your mind, there is also a mac ‘n’ cheese pizza. In other words, Sublime is elevating the beloved pizza and beer combo to a whole new level.

Inside Sublime you’ll find a large quartz bar, communal picnic benches and dining room tables surrounded by stacked stone walls and reclaimed wood and metalwork décor. The industrial feel pays homage to the historic California Restaurant Row, while appealing to a modern aesthetic. Grab a seat where you’d like and prepare to eat and drink your way through Sublime’s heavy menu.

Executive Chef Chad Tanner honed in on classic comfort food staples and added his own touch of contemporary flair, plus a whole lot of beer. After all, it’s an absolute necessity to have 15 varieties of mac ‘n’ cheese to choose from on any given evening. The menu offers a big selection of salads and small plate starters, burgers, sandwiches, and the signature spread of pizza, mac n cheese and grilled cheese. And the best part, all breads and yeast products are made on-site daily by the house baker, and Chef Tanner crafts house-made sauces and uses local farmer’s market produce and fine imported cheeses.

Just a few must-try menu items include Beer Cheese, a mac ‘n’ cheese plate made with beer cheese, applewood smoked bacon and red onion; Ecstasy, a stand-out mac ‘n’ cheese with gorgonzola béchamel, bacon, mushrooms, red pepper, garlic and thyme; signature Sublime pizza with roasted chicken, mushrooms, applewood smoked bacon, cheddar, béchamel sauce and truffle oil; Get Figgy With It pizza, made with figs, prosciutto, balsamic glaze, arugula and parmesan; and the Slap Yo Mama burger topped with brie, caramelized onion and bacon jam. Craving a lighter bite? Order up the Avocado Citrus Salad, a fresh mix of local avocado, grapefruit, blood orange, sunflower seeds, arugula, watercress, shaved manchego and saison honey vinaigrette. For a bad-ass side, start with the Beer Cheese Soup, a house specialty that changes daily.

And now for the beer. You will find a rotating list of easy-drinking Pale Ales, San Diego India Pale Ales as well as heavier Porters and Stouts for the serious drinkers. Locals will be happy to know that at all times, at least 16 of the 48 taps will be dedicated for San Diego craft beers, including Stone Pale Ale, Green Flash Hop Head, Ballast Point Yellowtail Pale Ale, Lost Abbey Red Barn and of course, Stone Sublimely Self-Righteous. More featured breweries include Allagash, Delerium, La Chouffe, Mother Earth Brewing, Port Brewing Company and Rougue. Sublime also offers a menu of wine selections – on draft.
