A vegetarian sausage roll – is that an oxymoron?
That is what Carol Duncan asked on the breakfast show this week when Kip gave her one to taste.
After much hilarity and jokes at the expense of the vegetarian, Carol admitted that not only was the roll good – it tasted like a real sausage roll! Although Carol claims that’s because there’s little meat in sausage rolls anyway.
So due to popular demand here is Kip’s recipe for vegetarian sausage rolls.
You’ll need:
1 cup cottage cheese
1/2 cup pecans
2-3 eggs
1 medium brown onion
1 tablespoon mixed herbs
1 tablespoon soy sauce
1 cup quick oats
1/2 cup dried breadcrumbs
2- 3 sheets puff pastry rolled and ready.
salt and pepper to season
milk to brush
It’s so simple:
Preheat oven to 180-200C Mix cheese, pecans, onions,eggs, herbs, and soy sauce in processor. Add oats and breadcrumbs (but don’t add all breadcrumbs if mixture is getting thick)
A Tip – to get a smooth gooey consistency add the extra egg if needed Then cut pastry sheet into 4 squares and fill each sheet with the mixture (about 2-3 tablespoons each serve). Make into a roll shape and place on baking sheet and baking tray. Pierce/prick rolls with knife or fork and brush with milk on top. Bake for 25-30 mins or until brown. Serve with tomato or barbeque sauce!
