Free From Gluten: Using the Fall Bounty: Apples
- 1 cup gluten free oats
- 3 cups water
- 1 cup So Delicious Coconut Milk or ½ c canned coconut milk
- ½ tsp cinnamon
- ½ tsp sea salt
- 2 Tbs organic butter
- 1 sliced apple
Bring the water to a boil then add oats, coconut milk, cinnamon, and salt. Reduce heat and cook at a simmer for 25-30 minutes, until creamy. Stir in butter at end of cooking and top with apple slices.
The second recipe is from the Free From Gluten kitchen, for maple apple crisp.
Ingredients
- 1/2 cup butter, softened
- 1 cup gluten free oats
- 3/4 cup brown sugar
- 5 apples cored and sliced (peeled or unpeeled)
- 2 Tbs lemon juice
- 1/3 cup maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
To make the cumble topping, mix the butter, oats and brown sugar in a bowl. Toss the apple slices, lemon juice, maple syrup and spices in a separate bowl. Layer apple mixture in 9×9 pan and cover with crumble topping. Preheat oven to 350 degrees and bake for 35 minutes, or until apples are tender.
For a vegan or dairy free option, substitute coconut oil for butter. You can also mix nuts or shredded coconut into the topping. You can also add a dash of apple cider to the mix for an extra hint of fall.
