Dickey’s Barbeque Pit is about to expand to New Jersey, and the person taking it there is Alan Cohen, one of the founding staffers of Pegasus News and the former editor.

According to the Paramus Post, Cohen has signed on as a franchisee, and this will be the first Dickey’s Barbecue Pit in New Jersey.

Dallas native Cohen, who was unavailable for comment, told the Post he was unable to find the caliber of barbecue that compared to what he grew up with in Texas.

Will he be able to achieve that caliber with Dickey’s? That is the question.

A spokesman for the company said that an opening would be at least 5 to 6 months away, as the location was still to be determined.

Cohen, who left Pegasus in 2007, graduated last year from the Kellogg School of Management at Northwestern University.

Dickey’s is in expansion mode: They’ve opened 12 stores nationwide this year, and intend to open 60 more by the end of 2011. There are 147 locations in 33 states.
