“WEBER’S TIME TO GRILL,” by Jamie Purviance, Oxmoor House, $24.95, 304 pages
Bestselling author Jamie Purviance created another of his famous grilling books designed to help the average man or woman cook those backyard meals with success. With eight grilling books to his credit, it is obvious he knows something about how to make those tasty meals that originate in the summertime haven of most homes.
But this book takes things one step further by offering recipes on facing pages for meals using similar ingredients with one designated easy and the other more adventurous. Those called easy are still scrumptious, but just take a little less preparation and cooking time. The adventurous meals aren’t really hard so much as they are expanded for more flavor.
For example, Spaghetti and Meatballs, which is easy and not on the normal list for grilling, is accompanied by Not Your Mother’s Meat Loaf, which adventurous and again a unique item to grill, both using ground beef. The former requires 25 minutes of prep and grilling time while the latter takes about 75 minutes. All in all, it is a unique way to look for something good to grill at a weekend soiree on the deck.
An added bonus to this well organized book is the inclusion of the “grilling basics” section. While many may feel sufficiently experienced, the basics chapter offers help in such things as “stocking your pantry”, “must have tools”, and a particularly interesting section on “prep school.” Even some well-heeled grillers might find helpful suggestions in this basic chapter.
Since many recipes for grilling meat require some sort of dressing or rub, Purviance has included a nice selection of recipes for rubs, marinades, sauces and dressings. The dressings even seem to be good enough to use on salads if you are so inclined.
Purviance and the Weber grilling folks have done themselves proud with this new addition to their grilling recipe books. A quick check of the book at Amazon.com shows that all those who have purchased and used the recipes find them delightful and well done.
For the weekend cook or the experienced griller, “Weber’s Time to Grill” will be a fine addition to the library.
Foil-Wrapped Baby Back Ribs
Serves: 4
Prep Time: 15 minutes
Grilling Time: about 1¼ hours
Special Equipment: 18-inch-wide heavy-duty aluminum foil
Rub
- 1 tablespoon kosher salt
- 2 teaspoons paprika
- 2 teaspoons granulated garlic
- 2 teaspoons dried thyme
- ½ teaspoon ground black pepper
- 2 racks baby back ribs, each 2 to 2½ pounds
- 1 cup hickory wood chips, soaked in water for at least 30 minutes
- 1 cup prepared barbecue sauce
1. Prepare the grill for direct cooking over medium heat (350° to 450°F).
2. In a small bowl mix the rub ingredients.
